Oven Fried Chicken
My oven fried chicken recipe:
1. Marinade chicken pieces in 2c buttermilk + 1/4c hot sauce from 1 to 24 hours. I used boneless chicken thighs and breast (pounded thin), and for hot sauce I like Crystal Hot Sauce.
2. Mix panko breadcrumbs, salt, pepper and herbs de provence (or other favored poultry seasoning). The panko can be toasted in the oven under the broiler for better color.
3. Remove chicken from marinade and coat with breadcrumb mixture.
4. Place breaded chicken pieces on lightly greased wire rack on top of baking sheet.
5. Bake at 450deg for 20min or until browned. (This I'm not as sure about...I think this is right but I recall having to check the internal temp and look of the breading quite a bit.)
