Poached Chicken

From my mom:

  1. Start with cold water and a cold 3-4 lb. whole chicken. Cover the chicken completely with water.
  2. Add 5 cloves of garlic, ginger and 1 cup vermouth, and turn to medium high heat to a boil.
  3. Skim off foam that boils up.
  4. Reduce heat to medium low heat and cook for 30 minutes, turning chicken about 2/3 of the way through the time. 
  5. Turn heat off and leave covered for 1-1.5 hours. 
  6. Remove chicken from pot and salt.
