Wafels & Dinges All Natural Spekuloos Spread

Made two things with this fabulous spread from Christine:


Spekuloos Pancakes using this peanut butter pancake recipe and substituting for the peanut butter, omitting the sugar and replacing butter for the vegetable oil. I also substituted half & half for the milk as that was the only dairy I had on hand. The batter turned out a bit thick so I had to add some water to make more pourable. Verdict: Keeper - leftover pancakes are easily warmed up in a toaster.



1 cup flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup creamy peanut butter spekuloos spread
2 tablespoons sugar
2 tablespoons vegetable oil butter, melted
1 large egg
1 cup plus 2 tablespoons milk half & half
Water as necessary to adjust consistency

  1. In a large bowl, mix together the flour, baking powder, and salt, and set aside.
  2. In a small bowl, melt the spekuloos and butter in microwave for 30 seconds. Cool slightly. Beat in the egg, then the half & half. Pour the spekuloos mixture into the flour mixture, stirring just until blended. Add water to get desired consistency.
  3. Next, lightly coat a griddle or skillet with oil and heat it over medium-high heat. Drop the batter onto the griddle by 1/4-cup measures. Cook until tiny bubbles appear on the surfaces of the cakes, then flip them and cook a few minutes more. Makes twelve 4-inch pancakes.
Spekuloos Swirl Brownies taking a cue from this easy brownie mix recipe. Again, I omitted the additional powdered sugar for the topping. Verdict: Easy and fast - though it's very dependent on the brownie mix used. I used Dark Chocolate Ghirardelli Brownie mix and the brownies overpowered any spekuloos flavor. I would probably do a thin layer of brownie then dollop spekuloos and brownie mix together on top for better swirling.
